How we make Tofu.


We produce the most flavoursome and nutritious tofu of various types. Organic soybeans are soaked, stone-ground, boiled at atmospheric pressure, coagulated with nigari (a sea-water extract) then pressed.

We Use
Premium Soybeans.

Blue Lotus Foods sources premium soybeans from Australian farms, mainly from the fertile volcanic soils of the Darling Downs. The soybeans are grown without artificial fertilisers, insecticides, herbicides, and then processed under strictly controlled organic conditions.

Exacting
Preparation.

The soybeans are inspected before being soaked in pure water for a period of time.

Stone
Grinding.

The soaked soybeans are ground in a stone grinder with a slow flow of water. This is a gentle way of grinding and we believe it produces superior flavour and nutrition.

"Go"
Cooking.

This slurry, called ‘go’, is then scooped into a large steam-jacketed kettle where heated water naturally extracts soymilk from the ground soybeans. Doing this extraction at normal atmospheric pressure produces soymilk with the ultimate nutritional and flavour characteristics.

Curds & Whey
Coagulation.

The soymilk is then filtered out from the hot slurry after passing through a filter. The hot soymilk is skilfully stirred by the tofumaker, and Nigari (a sea-water extract) is carefully added to the hot soymilk, magically transforming it into curds and whey! The curds are drained. They are the foundation of tofu.

Forming
Cutting & Cooling.

The curds are poured into specially designed boxes lined with cheesecloth and pneumatically shaped. The last step in this traditional process is when the tofu-maker cuts the blocks up by eye and then gently tips them into a chilly bath of fresh cold water. From there they are allowed to hibernate until ready for packing and storage.

Vegetable & Sesame Seed
Curried Tofu.

Recipe - 15 mins

250g Blue Lotus Organic Tofu

1 Small Parsnip (or Turnip or fennel) – thickly julienned
1 Carrot – thickly julienned
1/4 cup Sunflower seeds
1 Tbs Olive Oil
2 tsp Tamari
1/2 tsp Lemon Juice
1 tsp Turmeric
1 tsp Curry Powder

Slice the tofu into 1cm slices and cut again across the length.

Marinate the tofu in the olive oil, tamari. lemon juice, turmeric and curry powder for up to 2 hours.

Place the marinated tofu into a baking tray together with the vegetables and sunflower seeds.

Bake at 200 deg C for 30 minutes

Serves 4.

Sesame
Tofu Bites.

Recipe

250g Blue Lotus Tofu

1 Tbs Soy Sauce
1 Tbs Cornflour
1 Tbs Tbs Sesame Seeds
2 Tbs Vegetable oil

Cube tofu into bite-sized pieces. Pat dry with paper towel.

Soak the cubes in the soy sauce.

Place the cornflour and sesame seeds in a plastic bag.

Toss tofu cubes into the bag and shake it until coated.

Fry cubes in pre-heated oil in a pan, over medium heat, turning until all sides are lightly browned.

Serve!.

Variations

To spice it up, add pepper in with the cornflour.

Garlic in the soy sauce makes for a more interesting taste.

Cubes may be deep-fried.

Hints
The open and firm texture of Blue Lotus tofu makes it ideal for marinating. Be imaginative with your marinades. Use curry powder, olive oil and garlic, herbs and spices.

Bake marinated tofu over a low heat in the oven and you get a tasty, healthful addition to your meal.

Tofu may be boiled or stewed with other ingredients – chicken, red meats, vegetables – resulting in familiar but health-enhanced meals.

Remember, our tofu is already cooked and only needs you to prepare it for the table!

This is our
Story.


Blue Lotus started life in 1980, in a little home kitchen in the fresh pristine environment of the Dandenong Ranges, supplying home made tofu to a few lucky friends in the neighbourhood. From these humble beginnings, Australia’s first organic tofu was born.

The name ‘Blue Lotus’ has its origins in the Buddhist holy text, the Dhammapada, where it likens the scent of the Blue Lotus flower to the scent of virtue.

Being the first organic tofu made by following a very traditional method, it was sought out by Melbournians in the growing ‘health food stores’ of the 80’s. Up to this day, this enterprise has stubbornly followed the traditional principals despite the longer processing times and strong reliance on skills. Why? Because the tofu that results has an unsurpassed texture and flavour – a fact not lost on the many devoted followers.

We are proud to use only Australian-grown certified organic soybeans. This is a major part of the appeal of Blue Lotus tofu..
